Hamish and Andy Inspire a (Nation) Burger
I was thinking about the boys Caravan of Courage across the US the other day and imagining how many burgers (the unofficial national dish of America) they managed to down while they were there. It really does take courage to tackle some of the burgers dished up in that country. One bite could mean a heart attack in years to come. They don't mind an extra slice of processed cheese or two, not to mention a fourth towering burger patty. I on the other hand like a burger with colour, flavour and texture. Most of these elements are missing from our American friends offerings.
Hamish, Andy, try this lamb burger and let me know what you think. I have already had the tick of approval from my dad and he is a specialist on all things mince.

Diva's Lamb Burger (makes 10 patties)
Ingredients
Lamb Burgers
1kg lamb mince
1/3 cup dried apricots
½ brown onion
2 clove garlic
1/3 cup bread crumbs
1 egg
1 tbsp paprika
1 tbsp coriander ground
½ tbsp cumin ground
3 tsp sea salt
1 tsp black pepper
1/3 cup fresh coriander
100g pistachio lightly toasted and roughly chopped
Grilled Vegetables
2 small eggplant cut into 2cm thick rounds
2 zucchini sliced into half centimetre thick lengths
1 tbsp lemon juice
2 clove garlic crushed
Salt and pepper
4 tbsp olive oil
Extras
Turkish rolls
Hummus
Garlic yoghurt sauce
Sliced greens
Sliced tomato
Method
To make the burger pattie combine the garlic, onion and apricots in a food processor and process for 30 seconds or until chopped very finely. Place all ingredients in a large bowl and mix together well with your hands until the ingredients are well combined. Divide the mix into 8-10 even size burger patties then cover and refrigerate for an hour or more. To cook drizzle the patties with oil then cook through on a BBQ plate or seal each side on a griddle then cook in the oven at 180C for about 10 minutes until cooked through. To make the grilled vegetables combine the oil, garlic, lemon juice and seasoning in a large bowl and whisk. Add the vegetables and toss to coat. Grill the vegetables on a BBQ or griddle for a few minutes either side until coloured and just cooked. On a Turkish roll lay hummus, mixed greens, tomato, burger pattie, grilled vegetables then garlic yogurt sauce and close with the lid.

whoaaa, that sound so nice. im realy hungry now reading about all the ingredients. i love garlic, and lamb and zucini, and onion, and lemon. whoa i could eat this for the rest of my life. sound heaps good guys, :]
