Go Greek in Honour of Basil and Amy
Congratulations to Channel 7 Sports commentator Basil Zempilas and his lovely new wife Amy on their recent marriage on the beautiful Greek Island of Kasteloriso! Because not all of us could make the celebration (apparently my invite got lost) I wanted to make sure we all felt the love anyway. In honour of the Big Greeks wedding I have posted a recipe for Greek Chicken. The local specialty on Kasteloriso is actually a pie made from chick peas but as most of us would rather be carnivorous so I thought we would stick with an old favourite. When you make this recipe close your eyes, breathe in the aroma and you are practically there, looking at the sparkling blue waters of The Greek Islands.
Grilled Greek Chicken with Tzatziki (serves 4)
Ingredients
120 ml olive oil
3 cloves garlic, chopped
2 g chopped fresh rosemary
2 g chopped fresh thyme
6 g chopped fresh oregano
2 lemons, juiced
zest of 1 lemon
8 free range chicken thighs
Method
Combine all ingredients except the chicken in a medium size ceramic dish. Season with salt and pepper. Stir to combine. Add chicken. Turn to coat. Cover and refrigerate for 8 hours if time permits. Preheat a greased barbecue plate on medium-high heat. Cook chicken for 4 minutes each side or until just cooked through. Serve the chicken with Tzatziki, flat bread and Greek Salad.
Tzatziki Ingredients
2 (about 600g) telegraph cucumbers, halved lengthways, seeds removed
520g (2 cups) Greek-style natural yoghurt
3 garlic cloves, crushed
2 tsp olive oil
1 tsp ground cumin
1tsp sea salt
Freshly ground black pepper
Method
Grate the cucumber into a clean tea towel. Squeeze the tea towel to remove excess liquid from the cucumber. Combine all ingredients in a glass bowl and stir well to combine. Serve immediately or refrigerate overnight for a tastier result.
